This simple tomato and cheese toast recipe is comforting, versatile, and delicious. Melted white cheddar cheese and flavourful tomato slices on perfectly toasted bread. This easy tomato toast recipe is a great option for breakfast, lunch, or even a light dinner with a side like carrot fries.

Tomato cheese toast is incredibly easy to make and is ready in just 15 minutes, for a quick snack or meal. Whether you’re a busy bee or just looking for new breakfast recipes, this quick cheese toast recipe is a delicious option.

If you want to spice things up, top the toast with a generous sprinkle of parsley or basil and a drizzle of balsamic glaze. Or keep it simple, with just tomatoes and cheese.

The combination of fresh juicy tomatoes, melted cheese and crunchy toast is hard to resist. It’s the kind of dish that you look forward to eating every morning! Maybe it’s just me (it’s not), but tomato cheese toast kind of resembles the flavours of pizza, with the tomato, melted cheese, and crispy bread.

Tomato Cheese Toast Variations

Avocado: Top the finished tomato and cheese toast with sliced avocado and a sprinkle of salt and pepper.

Garlic: Spread the bread with garlic butter before topping with cheese.

Pesto: Spread the bread with a small amount of pesto and then top with cheese.

Caprese: Top the finished tomato cheese toast with fresh basil.

How to slice a tomato

To slice a tomato, you’ll need the sharpest knife you have! If you don’t have a sharp enough knife to cut through the tomato skin, a serrated knife is your next best option.

Remove the tomato stem and place it upside down on the cutting board, so that the flat top of the tomato is facing downward.

Hold the tomato in place with your hand making a claw shape, and start slicing through the tomato from one end. Work your way towards the other ending, moving your fingers further back as needed.

  • Bread- I like French bread for this recipe but you can use any kind! Sourdough or a baguette would be good.
  • Roma tomato- They’re bright, firm, and delicious. You can use any tomato, like heirloom or even cherry tomatos cut in half.
  • Cheese- I recommend white cheese like white cheddar, mozzarella, or gruyere. I used old white cheddar.
  • Salt and pepper to taste.
  • Parsley or oregano for garnish.

Instructions

  • Preheat the oven to 400°F and line a baking sheet with parchment paper or a baking mat. Slice your Roma tomato into 6 slices.

Place the bread on a baking sheet.

Top the bread with the shredded cheese.

Layer the sliced tomato on top. Sprinkle with salt and pepper.

Bake for 10 minutes. The cheese should be melted and gooey. Top the tomato cheese toast with a sprinkle of chopped parsley.

Tips for making tomato cheese toast

  • Spread the cheese to the edges of the bread, so it’s all coated.
  • If you dislike the wetness of tomatoes, remove some of the watery seed parts before adding them to the bread.
  • Generously sprinkle the tomato with salt and pepper.

What to serve with cheesy tomato toast

Tomato and cheese toast makes a great breakfast, lunch, dinner, or snack.

For a light side, serve fruit, vegetable slices, or a salad with the toast.

For a heartier side, serve fries or sweet potato fries, some chips, or air fryer tofu.

Substitutions

  • Any kind of bread will work! Sourdough, whole wheat, rye, ciabatta, bagels, etc.
  • Big slices of heirloom tomato would be good, or even halved cherry tomatoes.
  • Instead of parsley, sprinkle the toast with basil.
  • Any kind of white cheese will work. Even whipped feta or ricotta.

Storage

Since the toast is warm and crisp, and the tomatoes have a lot of moisture, this recipe will not store well. If you need to reheat the toast at all, just warm it in a 350°F (180°C) oven.

Yes! Tomato cheese toast is very versatile. Spread the bread with garlic butter or pesto, or top the finished toast with parsley, basil, red pepper flakes, or balsamic glaze.

Most cheese will work for tomato cheese toast, but I recommend mozzarella, white cheddar, or gouda.

  • 1 baking sheet
  • 1 cutting board
  • 1 serrated knife or a sharp non serrated knife

Ingredients
  

  • 2 slices bread I used French bread
  • ½ cup white cheddar cheese shredded
  • 1 Roma tomato sliced into 6 slices
  • salt and pepper to taste
  • parsley chopped, optional

Instructions
 

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or a baking mat.
  • Place the bread on the baking sheet and top with the shredded cheese. Layer the tomato on top and sprinkle with salt and pepper.
  • Bake for 10 minutes. The cheese should be melted and gooey. Top with parsley and serve.

Notes

Spread the shredded cheese to the edges of the bread, for some in every bite.
If you dislike the wetness of tomatoes, just remove the seeds from the middle.
