They’re easy to meal prep and are also shelf stable since they’re made with shelf stable ingredients like dates, peanut butter, and dark chocolate. It’s so convenient to make a batch and leave it on the counter for a quick snack (whenever you walk by).

Using a small knife, cut along the date lengthwise. Now using your fingers, pry the date open from the cut you made. Grab the pit and pull it out of the date. Now the date is de-pitted and ready to consume.

  • Deglat noor dates – Medjool dates will also work. Delgat noor as slightly smaller than medjool, and are slightly more fleshy, making them more textured.
  • Peanut butter – I used natural smooth peanut butter because I like the taste. It’s nuttier and less sweet than non natural peanut butter. Use whatever kind suits you.
  • Dark chocolate – To melt and drizzle over the dates for added sweetness and taste.
  • Salt – I use kosher salt because it’s less salty than sea salt. You can use sea salt, just be careful how much you use.

Instructions

  • Use storebought pitted dates or pit the dates yourself by cutting it open, and removing the pit.

Lay the pitted dates on a baking sheet with parchment paper, spacing them 1-2 inches apart.

Fill each date with a spoonful of peanut butter.

Melt the dark chocolate in the microwave in 15 second intervals, stirring in between.

Drizzle the dark chocolate over the stuffed dates, creating a zip zag pattern. You could also fully dip the dates if you want.

  • 8 deglet noor dates medjool will work
  • ¼ cup peanut butter
  • 2 tablespoons dark chocolate melted
  • sea salt or kosher salt

Instructions
 

  • Use a small knife to cut the dates lenthwise. If they still have the pits, take them out and discard them.
  • Fill the dates with a spoonful of peanut butter each. Drizzle the dates with the melted chocolate and sprinkle with salt.
  • Freeze for 10-15 minutes to solidify the melted chocolate.
