- 4 slices white bread
- 1 tablespoon butter or margarine
- 4 tablespoons goat cheese
- 2 oz mozzarella cheese sliced or shredded
- 2-3 dill pickles sliced
Instructions
- Heat a non stick or cast iron pan over medium/medium-low heat.
- Butter one side of each slice of bread and place them butter sides down onto a piece of plastic wrap to prevent them from sticking.
- Spread the goat cheese onto 2 pieces of the bread, or crumble it if it's too hard to spread. Add the pickles on top of the goat cheese, and then the mozzarella slices.
- Close the sandwiches with the other pieces of bread, with the butter sides facing upwards.
- Transfer the sandwich to the pan and fry for 2-4 minutes, until golden brown and crispy. Flip the sandwich over and fry for another 2-4 minutes, until golden brown and crispy.
