  • White bread- I used white French bread, but you could use any. Sourdough bread would be great.
  • Goat cheese- It’s smooth and creamy and pairs perfectly with the crispy bread.
  • Mozzarella- When mozzarella melts it gets stretchy and gooey, better than other cheeses.
  • Dill Pickles- Sliced dill pickles add the perfect juicy crunch to this goat cheese grilled cheese.
  • Butter- To spread on the outside of the sandwich, to make the bread golden and toasty.

Substitutions

  • Any bread will work for grilled cheese. Even bagels! Try my Bagel Grilled Cheese.
  • Mozzarella has the stretchiest consistency, but any other cheese will work. Try cheddar, gouda, or havarti.
  • If you’re a fan of any other kinds of pickles, feel free to try them in the grilled cheese!

Instructions

  • Heat a non stick pan over medium/medium-low heat.
Bread on plastic wrap.

Butter the two slices of bread, and place the butter sides down on a piece of plastic wrap.

Spread the goat cheese onto one side of the bread.

Top the goat cheese with the pickle slices.

Close the sandwich and transfer it to your pan.

Fry for 3-4 minutes, until golden and crispy. Then flip it, and fry the other side for 3-4 minutes.

Slice the grilled cheese in half and serve.

Tips for making

  • Keep the heat at medium/medium-low. To make the perfect grilled cheese, low and slow (low heat) cooking is the best.
  • Sturdy bread white bread like sourdough is the best bread for grilled cheese.
  • Make sure the pickle is sandwiched between the cheese, so the cheese acts as a glue holding everything together.

What to serve with goat cheese grilled cheese

Ingredients
 
 

  • 4 slices white bread
  • 1 tablespoon butter or margarine
  • 4 tablespoons goat cheese
  • 2 oz mozzarella cheese sliced or shredded
  • 2-3 dill pickles sliced

Instructions
 

  • Heat a non stick or cast iron pan over medium/medium-low heat.
  • Butter one side of each slice of bread and place them butter sides down onto a piece of plastic wrap to prevent them from sticking.
  • Spread the goat cheese onto 2 pieces of the bread, or crumble it if it's too hard to spread. Add the pickles on top of the goat cheese, and then the mozzarella slices.
  • Close the sandwiches with the other pieces of bread, with the butter sides facing upwards.
  • Transfer the sandwich to the pan and fry for 2-4 minutes, until golden brown and crispy. Flip the sandwich over and fry for another 2-4 minutes, until golden brown and crispy.

Notes

Cook the grilled cheese at medium/medium-low heat. Low and slow is the key to the perfect sandwich.
Sandwich the pickle between the goat cheese and mozzarella, so that the cheese acts as a glue to hold the sandwich together.
