Homemade Vegan Bannock Recipe

Vegan Bannock | A comforting traditional quick bread made with flour, vegan butter, and water, baked in a large circular loaf and cut into sections. It’s best served with soup, or spread with butter and jam.

Bannock is a type of quick bread made with simple ingredients like flour, baking powder, butter, and water. It’s similar to a scone, hearty and dense with a slight fluffiness on the inside.

Bannock was brought to Canada by Scottish settlers and was a large part of the diets of settlers and fur traders. Due to colonialism, Indigenous peoples eventually adopted the recipe and even adapted it with other ingredients.

My favourite way to eat bannock is with butter and strawberry jam! My family always served bannock with soup, especially when camping. Serve vegan bannock with your favourite soup, stew or chilli.

If you’re new to vegan baking, bannock is a great place to start! It’s super easy to make and requires zero experience. The only important thing is that you don’t over work the dough. It can be shaggy and not entirely smooth.

How to make vegan bannock

Making bannock is very quick and super easy! It’s similar to making biscuits or scones.

Mix the flour, salt and baking powder in a bowl. Then add the butter. Combine the butter and flour pinching the butter with the flour between your fingers. Aim for a crumbly mixture, with pea sized pieces of butter.

Add the water to the flour and butter mixture, and mix with a fork into a shaggy dough. Place the shaggy dough onto the counter, and form it into a smoother, but still shaggy ball. Don’t over work it!

Then transfer the dough to a circular baking sheet, and flatten it to 1 1/2 inches thick. Bake for 25-30 minutes, until the top and sides are slightly browned.

Cast iron bannock and campfire bannock

Vegan bannock is a great camping recipe, whether you make cast iron bannock, a super easy method, or campfire bannock, a fun activity for both adults and kids. Prepare the dry ingredients in a bag. Pack the butter in your cooler. When you’re ready to make bannock, mix the dough in a large bowl.

Then place it in a greased cast iron pan, cover with a lid, and place it on a grate over the campfire. Cook time will depend on the heat of the fire, so keep an eye on it. Once the sides and top are a light golden brown colour, it’s ready. Or, wrap pieces of the dough around clean wooden sticks, and roast over the fire.

  • All purpose flour- All purpose flour is great for tender baked goods, like bannock.

  • Preheat the oven to 350°F. Place a square of parchment paper on a round baking sheet.

In a large bowl, mix the flour, baking powder and salt.

Add the butter and pinch it together with the flour to create a crumbly consistency.

Turn the dough onto the counter and form it into a smoother, but still slightly shaggy ball. Don’t overwork the dough.

Flatten the ball so it’s 1 1/2 inches thick. Transfer it to the prepared baking tray.

Bake for 25-30 minutes. The top and the edges should be slightly golden brown, and it should feel firm.

Let the bannock cool for 5 minutes and then slice it into 8 triangles, like you would a pizza. Serve with soup or spread it with butter and jam.

Tips for making bannock

  • Preheat the oven and wait for it to come to temperature to bake the bannock. This ensures even baking.
  • For fluffy bannock, don’t overwork the bannock dough. Overworking the dough makes it tough and chewy.

What to serve with vegan bannock

Bannock is delicious when served warm with butter and jam of your choice. My favourite is strawberry jam.

Substitutions

  • Although all the ingredients in this bannock recipe are essential, you can bake it in several different ways. On a baking sheet, baked in a cast iron pan, fried or even wrapped around sticks, and roasted over a campfire.

Storage

Store bannock in an air tight container or a large freezer bag, at room temperature for up to 3-4 days.
