This easy peanut butter cucumber sandwich is unique, refreshing, and perfect for a quick snack or lunch. Kids also love this recipe and it’s simple enough for them to make on their own!

I was introduced to this sandwich recipe at my first kitchen job, where we had it on the menu. This easy yet delicious peanut butter cucumber sandwich is a favourite for all, whether you’re a sandwich enthusiast like me, you’re looking for fun lunch ideas, or you have kids who like simple foods.

The peanut butter cucumber sandwich is similar to the beloved snack, peanut butter and celery. Just slightly different. Cucumber is a similar, crunchy water based vegetable. The creamy peanut butter with the crunchy cucumbers just works. Sandwich it between two pieces of light fluffy bread and you’ve got yourself a delicious creation.

Peanut butter is high in healthy fats, and also a good source of protein according to Healthline. Some storebought peanut butters have added sugar but peanut butter cucumber sandwiches can easily be a healthy and satiating snack or part of lunch when you choose the right ingredients.

There are so many bread choices, ranging from whole wheat, to sourdough, to dark rye. Many breads are enriched with nutrients and the most nutrient dense breads are likely made with whole wheat flour according to Healthline.

How to make peanut butter cucumber sandwiches

Starting with the bread, you can either toast it or leave it as it is, nice and fluffy. Spread each piece of bread with smooth peanut butter. This is essential, as the peanut butter creates a barrier between the fluffy bread and the moist cucumbers.

Then layer the cucumbers on one piece of bread and top them with the other piece of bread. Slice in half or however you prefer. Enjoy as a snack or as lunch with a side of coconut yogurt, fruit, or veggies and dip.

What kind of bread is best for cucumber sandwiches?

I recommend a fluffy white bread. The pillowy texture of the bread will encase the creamy peanut butter and the crunchy cucumbers, resulting in an overall soft, light sandwich. Using too dense a bread could make chewing the peanut butter and bread a little difficult. We’ve all experienced that moment of panic when peanut butter gets stuck to the top of your mouth. So choose a nice soft bread!

Can I swap nut butter for peanut butter?

Sure, you can use any nut or seed butter. Peanut butter is a classic, but other nut butter will work. Try almond butter, it’s slightly more hefty than peanut butter. Or cashew butter, an ultra smooth spread. Seed butter like sunflower seed butter or pumpkin seed butter is a delicious choice and is also kid-friendly.

  • Bread of your choice – I chose a light and airy white bread for this sandwich. I recommend a fluffy bread, rather than a tough or dense bread.

Tips for making cucumber sandwiches

  • Spread both pieces of bread: The peanut butter will create a barrier between the fluffy bread and the moist cucumbers, keeping the bread from absorbing that moisture.
  • Pat the cucumber dry: Cucumbers are full of moisture, so patting the sliced cucumber dry can remove some of the excess moisture.
  • Go all in on that satisfying crunch and toast the bread!
  • Add a drizzle of honey or a sprinkle of salt to bring out the flavours.

What to eat with a peanut butter sandwich

Sandwiches go great with a number of sides! Try the classic combo of a sandwich and fries or chips.

For a lighter side, try a banana, sliced veggies with hummus, or your favourite dipping sauce.

Storage

Peanut butter and cucumber sandwiches are great for meal prep or prepared lunches. Store the sandwich wrapped in plastic wrap or in an air tight container in the fridge for up to 3-4 days. If you spread both pieces of bread with peanut butter, it will prevent the bread from absorbing the moisture of the cucumbers.
