Coronation chicken is simply curry chicken salad. To make a vegan coronation chicken sandwich, I combined jackfruit, curry powder, vegan mayo, mangon chutney, raisins, and chives.

A generous amount of that curry jackfruit filling between two slices of vegan buttered bread is seriously heavenly.

The History Behind Coronation Chicken

British cuisine has always been heavily influenced by Indian food, even Queen Elizabeth II herself took a liking to classic Indian ingredients like curry powder and chutney.

The coronation chicken sandwich was developed especially for the queen, and was served at, wouldn’t you know, her coronation in 1953.

What’s so special about curry-flavoured chicken though? Well, at the time, ingredients like curry, wine, and apricots, all ingredients in the original coronation chicken recipe, were considered luxurious as the UK was still on wartime rations and many food items were sparse.

What is the main ingredient in vegan coronation chicken?

When it comes to replacing chicken in any vegan or vegetarian recipe, protein sources are plentiful.

For this recipe I use jackfruit because it has a chewy stringy flesh, which falls off the core nicely, replicating the texture of shredded chicken, which is used in the original coronation chicken sandwich.

Other protein options include seitan pieces, soy curls, tofu, mashed chickpeas for a smoother texture, or your favourite store-bought alternative.

What is jackfruit?

Jackfruit is a giant tropical green fruit with a poky exterior. The flesh of the fruit is lush, chewy and stringy in texture. The cool thing about jackfruit is that it is consumed during both its ripe and unripe stages and is often used in vegan recipes.

Ripe jackfruit flesh is slightly yellow in colour, and tastes subtly sweet with a sort of tropical flavour, almost a combination of banana, apple and mango.

Unripe jackfruit is whiter in colour, and virtually tasteless, making it the perfect meat substitute as it takes on flavour very easily. Unripe jackfruit can be consumed raw or cooked.

How to prepare canned jackfruit

Jackfruit has a large core, as well as seeds. Both need to be removed before consumption, even when it’s canned. On a cutting board, firmly hold a piece of the jackfruit, and with a pairing knife, cut away the flesh from the hard core. Remove the small round seeds with your hand.

  • Canned unripe jackfruit – Jackfruit is stringy, chewy and virtually flavourless, making it the perfect chicken alternative. Drain and rinse the canned jackfruit pieces, then cut away the flaky flesh from the core.
  • Raisins – I use sultana raisins for this recipe. They provide a sweet yet tart flavour, as well as texture and colour.
  • Vegan mayo – I like both Presidents Choice vegan mayo and Hellmanns vegan mayo.
  • Mango chutney – I recommend using mango or apricot chutney as they pair very well with the raisins and curry flavour. If you prefer, you can use chopped dried apricots instead.
  • Chives – For fresh flavour and a burst of colour.
  • Curry powder – This vibrant blend of spices provides a warm and earthy flavour. I recommend using mild curry powder for moderate spice.
  • Salt and pepper to taste

Instructions

  • You can tell where the jackfruit core is by feeling for the hardest part. Cut off and discard the core.

First, drain and rinse the canned jackfruit. Then cut away the core of the fruit from the stringy flesh. Gently pull apart the flesh to create strands.

Add all ingredients to a large mixing bowl, and mix to combine.

Serve as 2 sandwiches.

Serve the sandwich with a side of your favourite fries or chips. For a lighter option, lose the bread and serve the vegan coronation chicken mixture with lettuce cups or rye crisps.

Tips for making vegan coronation chicken

  • Drain and rinse jackfruit: Much like chickpeas, jackfruit is canned in a liquid that must be drained and rinsed off!
  • Adding texture: Adding raisins and chives really gave the dish some much needed texture. You could also add chopped nuts or chopped celery.

What to serve with vegan coronation chicken

I used sourdough bread to make the sandwich. You could try pumpernickel or whole-grain bread. Or try ciabatta for a crusty alternative.

Finish the sandwich by adding some leafy greens such as spinach, arugula or green leaf lettuce.

Serve with a side of french fries, chips, veggie sticks or a side salad.

Store the coronation chicken mixture in an air-tight container in the fridge for up to 3-4 days.

If the sandwich is already made, it is best to eat it within the day as the bread will start to absorb moisture.

How do I prevent the bread from getting soggy?

Spread butter on both sides of the bread to keep it from absorbing moisture. Additionally, you can use lettuce leaves to create an extra barrier and to add texture.

Can I make the filling in advance?

Absolutely! In fact, making the filling ahead of time allows the flavours to meld and intensify. Store in an airtight container in the fridge for up to 3 days.

How do I achieve a chicken-like texture in the filling?

Jackfruit remains the number one choice when it comes to replicating the texture of chicken as the texture of the fruit is stringy and chewy, similar to that of chicken or pulled pork.

  • 280 grams jackfruit drained and rinsed
  • 3 tablespoons vegan mayo
  • 1 tablespoon mango chutney
  • 1 teaspoon mild curry powder
  • 2 tablespoons raisins
  • 3 sprigs chives chopped
  • salt and pepper to taste

Instructions
 

  • Drain and rinse canned jackfruit.
  • With a pairing knife, cut away the fleshy part form the hard inner core. Remove round seeds. With your hands, shred the jackfruit flesh by pulling it into strands.
  • Add all ingredients to a medium sized mixing bowl and mix until combined.
  • Serve between 2 slices of bread, or on rye crisps or a similar cracker.
