You can likely find vegan eggnog at your local grocery store around the holiday season, from mid-October to the end of December.

What toppings should I put on vegan egg nog French toast?

The French toast is marvelous on its own, but the toppings are what really make this French toast over the top.

Serve the French toast with a pat of vegan butter, and spread it around so it evenly coats the bread slice. Sprinkle some powdered sugar over top. Then generously drizzle some maple syrup over top. Add a dollop of vegan whipped cream, such as coconut whipped cream. Then, the finishing touch. Some freshly grated nutmeg.

  • Crusty white bread – Using bread that has a tougher crust ensures that the French toast is soft on the inside, with a bit of bite from the crust. I suggest using French bread or crusty sourdough.
  • Egg replacement – I use egg replacement. I like this mix because it’s a mix of various leavening ingredients that ensure ultimate lift and thickness. You can alternatively use 3 tbsp of cornstarch.
  • Cinnamon and nutmeg- These two spices create the perfect balance of sweetness and spice, they are the face of holiday cooking and baking.
  • Vanilla extract- Another essential French toast ingredient, adding an extra layer of sweetness and flavour.
  • Salt- A pinch of salt to balance the sweetness and enhance the flavour of the other ingredients.
  • Fresh nutmeg- This is optional. I like to grate it on top of the French toast to kick the flavours up a notch. Nutmeg is most prevalent in eggnog and it just gives the flavour a little boost.

Instructions

Heat a large non-stick pan on medium heat. Add a tablespoon of vegan butter.

In a shallow bowl, such as a casserole dish or large bowl, whisk together the eggnog, egg replacement, cinnamon, nutmeg, and vanilla. Using a shallow bowl makes dipping the bread slices in the mixture a lot easier.

Lay your bread in the eggnog mixture, moving it around to coat it. Flip it over and thoroughly coat the other side as well. Remove from the mixture and let the excess mixture drip off.

Remove from the pan and transfer to a plate. Repeat with the remaining slices of bread.

Carefully place the bread into the pan. Let it cook for 2-3 minutes, or until the edges look dark and crispy, then flip. The cooked side should be glossy and moist but not wet-looking.

  • Don’t overcook: French toast cooks rather quickly, especially since this recipe is egg-free, so I suggest cooking for only 1-2 minutes per side.
  • Fresh nutmeg on top: Nutmeg is very prevalent in eggnog, so grating a little bit on top of the French toast gives the eggnog flavour an extra boost.
