How to make vegan basque cheesecake with tofu.

This vegan dessert is creamy, smooth and perfectly sweet. I made a strawberry sauce and blueberry sauce to go with the cheesecake.

Ingredients: Silken tofu Coconut cream Non dairy cream White sugar Cornstarch Vanilla extract Pinch of salt Optional: Strawberries Blueberries Sugar Lemon juice

Line a cake pan with parchment paper and brush with vegan butter.

Blend all the ingredients together until they're a smooth mixture.

Pour the mixture into the cake pan and bake at 400°F.

Bake for 65-70 minutes, or until the top is crinkly and a dark golden brown.

Heat the fruit, sugar and lemon juice on medium high heat, simmer for 10-15 minutes.

After the cheesecake has cooled, transfer it to a wire rack to cool completely.
