How to make vegan scalloped potatoes

Scalloped potatoes are a delicious and comforting side dish made with thinly sliced potatoes and a savoury cream sauce. This potato dish is perfect for family dinners or holidays like Easter. Vegan scalloped potatoes are easy to make and just as creamy and indulgent!

Ingredients Vegetable stock Onion + shallot Garlic Raw cashews Spices Vegan butter Flour Plant milk Russet potatoes

Cook the onion and shallot until translucent. Add the garlic and cook until fragrant.

Add the flour and stir.

Add the stock and stir. It will create a thick paste at first, then thin out.

Add the spices.

Add the plant milk and whisk. Bring the sauce to a simmer and cook for 3-4 minutes to thicken.

Turn off the heat and whisk in the blended cashews.

layer half of the potatoes in a baking dish and cover with half the sauce. Repeat with the rest of the potatoes and sauce.

Cover with foil and bake for 50-55 minutes. Remove the foil and bake for 10 more minutes.
