These mini grilled cheese bites are crispy, cheesy, and quick to make. They're baked in the oven, making them an easy and hands-free snack, or accompaniment for soup or salad.
Preheat the oven to 350°F/180°C and line a baking sheet with parchment paper.
Place a small piece of plastic wrap on your counter top. Butter each slice of bread on one side and place two of them, butter sides down, onto the plastic wrap.
Divide the cheese between the two pieces of bread, and then top with the last two slices of bread. The buttered sides of the bread should be facing upward.
Slice each sandwich into 4 pieces, then cut each strip into 4 squares. You should have 16 squares per sandwich. Carefully transfer the pieces to the baking sheet.
Bake for 6-7 minutes, and then flip. Bake for another 6-7 minutes until the bread is lightly toasted and the cheese is melted.
