This simple staple ticks all the sandwich boxes. Freshness, crunch factor, and simple flavouring. Crisp cucumber slices sprinkled with salt and pepper, on fluffy buttered bread topped with a handful of peppery arugula.
Wash and slice half of a cucumber into 1/4 inch slices, you should get about 20 slices.
Lay the cucumbers on a piece of paper towel and lightly sprinkle with salt. Top with another sheet of paper towel. Leave for 3-5 minutes. This will draw some of the moisture out.
Butter each piece of bread. Layer the cucumbers onto two slices of bread
Sprinkle the cucumbers with salt and pepper to taste. Top with a handful of mixed greens.
Top with the remaining slices of buttered bread. Slice the two sandwiches in half and enjoy.
