These savoury waffles make a delicious breakfast, brunch, or quick dinner. Sweet potato blended with flour, plant milk, herbs, and spices to create a smooth and fluffy waffle batter. This recipe is super fast to whip together and is so tasty.
Peel and chop 1 medium sized sweet potato into medium sized pieces and add to a pot with a sprinkle of salt. Cover with water and bring to a boil.
Cook for 10-15 minutes, stirring occasionally. They're ready when they are fork tender.
Drain the sweet potato pieces and transfer them to a food processor. Blend for 30-60, until the puree is smooth. Measure 1 cup for the waffle recipe.
Sweet potato waffles
Add the sweet potato puree and plant milk to a food processor and blend for 10 seconds, until the mixture is thin and smooth.
Add the all purpose flour, baking powder, salt, spices, and dill. Blend until smooth, about 20. You may need to scrape down the edges.
Heat your waffle maker and brush both sides with neutral oil or butter. Add 1/3-2/3 cups of the filling to the waffle grid. The mixture should just cover the grid and reach the sides. Don't overfill.
Cook for 3-5 minutes, depending on the strength of your waffle maker. The outside of the waffle should be crispy and the grid indents should be dark brown in colour.
