An easy and nutritious chickpea salad filled with dill pickle, white onion, and a dill dressing. This flavourful salad is satisfying and filling, perfect for meal prep or a quick lunch.
1 ½teaspoonsdried dill(3 teaspoons if using fresh)
1teaspoonwhite sugar
⅛teaspoongarlic powder
salt and pepper to taste

Instructions
In a large mixing bowl, whisk together the mayo, pickle juice, sugar, garlic powder, salt, and pepper until smooth.
Add the chickpeas, pickle, and onion to the dressing bowl. Mix until combined and evenly coated in the dressing.
Notes
Taste the dressing once it's made. Add salt and pepper to taste, as your pickles may taste saltier than mine.Use home cooked chickpeas - they're creamier than canned chickpeas.
