Dill Pickle Chickpea Salad | An easy and nutritious chickpea salad filled with dill pickle, white onion, and a dill dressing. This flavourful salad is satisfying and filling, perfect for meal prep or a quick lunch.

This creamy dill pickle chickpea salad is made with chickpeas, dill pickles, and white onion, in a simple mayo dressing. It’s easy to make in just a few minutes, with 7 simple ingredients that you probably have on hand.

Chickpeas are a very nutritious and versatile ingredient! They can be used as the base of salads, sandwich spreads, or even desserts like my Chickpea Cookie Dough Balls.

You can also mash the chickpea salad and use it in sandwiches or wraps. I always add pickles to sandwiches, so I love adding them straight to the filling to save time when meal prepping.

If you love dill pickles, you’ll love this dill pickle salad recipe! This recipe uses dried dill but you can use fresh dill if you have it on hand. And you may as well make my Vegan Dill Dip while you’re at it!

How to meal prep chickpea salad

Chickpea salad is my go-to for meal prep when I’m working! It’s so filling and nutritious, and is so easy to whip up in a pinch.

This is the best dill pickle chickpea salad, and I’ve been eating it by itself, or mashed up in a wrap or sandwich. You can do the same! Chickpea salad is also great on top of salads or as a dip with vegetables or crackers.

  • Chickpeas- I like to cook dried chickpeas at home, as they’re smoother and more flavourful, but canned chickpeas will work for this recipe.
  • Dill pickles and white onion- Dill pickles are tangy and flavourful, as well as crunchy. Onion also offers some crunch.
  • Mayo, pickle juice, dried dill, sugar and garlic powder- The sauce for the salad is delicious and has the perfect balance of tanginess and sweetness.
  • Salt and pepper to taste- Keep in mind that pickles are salty. You can always add more salt if needed.

Substitutions

  • Instead of dried dill, use double the amount of fresh dill.
  • Vegan mayo can be used in place of regular mayo.
  • Add white beans to the salad to add some variety.
  • If you’re not an onion fan, feel free to leave it out, or replace it with green onion (they’re less strong).

Instructions

  • Dice the pickles and onion. I like the pickle pieces slightly larger than the onion.

Whisk until smooth. Taste and adjust the salt if needed.

Mix together until combined.

Tips for making dill pickle chickpea salad

  • Dried chickpeas cooked at home are creamier, smoother, and more flavourful. If you can cook them at home, do so! If not, canned chickpeas will work.
  • Taste the dressing and adjust the salt as needed. Pickles are quite salty, so keep that in mind when adding salt.

What to serve with chickpea salad

Chickpea salad is great for lunch or dinner paired with a sandwich, wrap, or other salad. Pair the salad with a Buffalo Tofu Sandwich or a Bagel Grilled Cheese.

Serve the chickpea salad by itself, in a sandwich, on top of a salad, or as a dip with veggies or crackers.

Storage

FAQ’s

Are homemade chickpeas better than canned chickpeas?

Yes, homemade chickpeas are creamier and more flavourful than canned chickpeas. But, canned chickpeas are convenient, easy to use, and will work for this recipe.

  • 3 cups cooked chickpeas canned chickpeas work too
  • ½ cup dill pickles chopped, about 4-5
  • 2 tablespoons white onion chopped small
  • ¼ cup mayo
  • 1 tablespoon pickle juice
  • 1 ½ teaspoons dried dill (3 teaspoons if using fresh)
  • 1 teaspoon white sugar
  • teaspoon garlic powder
  • salt and pepper to taste

Instructions
 

  • In a large mixing bowl, whisk together the mayo, pickle juice, sugar, garlic powder, salt, and pepper until smooth.
  • Add the chickpeas, pickle, and onion to the dressing bowl. Mix until combined and evenly coated in the dressing.

Notes

Taste the dressing once it’s made. Add salt and pepper to taste, as your pickles may taste saltier than mine.
Use home cooked chickpeas – they’re creamier than canned chickpeas.
