This creamy dill pickle chickpea salad is made with chickpeas, dill pickles, and white onion, in a simple mayo dressing. It’s easy to make in just a few minutes, with 7 simple ingredients that you probably have on hand.
Chickpeas are a very nutritious and versatile ingredient! They can be used as the base of salads, sandwich spreads, or even desserts like my Chickpea Cookie Dough Balls.
You can also mash the chickpea salad and use it in sandwiches or wraps. I always add pickles to sandwiches, so I love adding them straight to the filling to save time when meal prepping.

- 3 cups cooked chickpeas canned chickpeas work too
- ½ cup dill pickles chopped, about 4-5
- 2 tablespoons white onion chopped small
- ¼ cup mayo
- 1 tablespoon pickle juice
- 1 ½ teaspoons dried dill (3 teaspoons if using fresh)
- 1 teaspoon white sugar
- ⅛ teaspoon garlic powder
- salt and pepper to taste
Instructions
- In a large mixing bowl, whisk together the mayo, pickle juice, sugar, garlic powder, salt, and pepper until smooth.
- Add the chickpeas, pickle, and onion to the dressing bowl. Mix until combined and evenly coated in the dressing.
