Easy Teriyaki Udon Noodles

Teriyaki udon noodles are a simple and quick dinner idea! They’re flavourful, and comforting with every bite. You can enjoy them as is, or add your favourite vegetables, and a protein source, like tofu.
The homemade teriyaki sauce is easy to whip up and completes the noodle dish. It’s made with soya sauce for umami flavour, brown sugar for sweetness, garlic and ginger for zestiness, and rice vinegar.
The teriyaki sauce is perfectly balanced and is perfectly paired with bouncy udon noodles and crisp sauteed vegetables. Using frozen vegetables, you can easily add some more nutrients to these easy teriyaki noodles!

What can I add to teriyaki noodles?
To boost nutrition and add texture, you can add your favourite vegetables to the noodle dish. Add broccoli, cauliflower, snap peas, or water chestnuts.
If you want to add protein, you can add tofu or tempeh. I love adding my Panko Tofu to noodles!

In a small bowl, mix the sauce ingredients together. Add the cornstarch slurry.
Heat a drizzle of oil in a pan over medium heat. Add the onion and carrot, and saute for about 5 minutes, until slightly softened.
Add the udon noodles to the pan. Add a drizzle of water to help soften the noodles.
As the noodles soften, gently pull them apart. Add the sauce and heat. The sauce should thicken in 2-3 minutes.
Top with sliced green onion to serve.

Storage
Store the teriyaki noodles in an air-tight container in the fridge for up to 3-4 days. Store in the freeze for up to 3-4 months.

- neutral oil
- 2 packages udon noodles (200g each)
- ½ yellow onion diced
- ¼ cup + 1 tablespoon soya sauce
- ½ cup water
- 1 tablespoon cornstarch + 1 tablespoon water
- 2 tablespoons brown sugar
- 2 cloves garlic minced
- 1 teaspoon ginger grated
- 1 teaspoon rice vinegar
- 1 teaspoon chili paste optional
Instructions
- In a small bowl, whisk together the soya sauce, 1/2 cup water, brown sugar, garlic, ginger, rice vinegar and chili paste. In a small bowl, whisk together the cornstarch and 1 tablespoon of water. Add it to the sauce and mix.
- Heat a drizzle of neutral oil in a frying pan over medium heat. Add the carrot and onion, and saute for 5-6 minutes, until slightly softened.
- Add the udon noodles to the pan with a splash of water. The steam will help soften the noodles. As they soften, gently pull them apart.
- Add the sauce to the noodles and mix to coat. Once the sauce starts to simmer, it should thicken within 2-3 minutes.
