This easy teriyaki noodles recipe consists of bouncy udon noodles covered in a homemade teriyaki sauce. It's perfect for a quick dinner and can be made with your favourite vegetables!
In a small bowl, whisk together the soya sauce, 1/2 cup water, brown sugar, garlic, ginger, rice vinegar and chili paste. In a small bowl, whisk together the cornstarch and 1 tablespoon of water. Add it to the sauce and mix.
Heat a drizzle of neutral oil in a frying pan over medium heat. Add the carrot and onion, and saute for 5-6 minutes, until slightly softened.
Add the udon noodles to the pan with a splash of water. The steam will help soften the noodles. As they soften, gently pull them apart.
Add the sauce to the noodles and mix to coat. Once the sauce starts to simmer, it should thicken within 2-3 minutes.
