Heat a non stick or cast iron pan over medium/medium-low heat.
Butter one side of each slice of bread and place them butter sides down onto a piece of plastic wrap to prevent them from sticking.
Spread the goat cheese onto 2 pieces of the bread, or crumble it if it's too hard to spread. Add the pickles on top of the goat cheese, and then the mozzarella slices.
Close the sandwiches with the other pieces of bread, with the butter sides facing upwards.
Transfer the sandwich to the pan and fry for 2-4 minutes, until golden brown and crispy. Flip the sandwich over and fry for another 2-4 minutes, until golden brown and crispy.
