A comforting traditional quick bread made with flour, vegan butter, and water, baked in a large circular loaf and cut into sections. It's best served with soup, or spread with butter and jam.
Preheat the oven to 350°F and line a circular baking sheet with parchment paper.
Mix the flour, baking powder, and salt in a large bowl.
Add the butter and mix it with the flour, pinching the butter. Form a crumbly mixture with pea sized pieces of butter.
Add the water and mix with a fork to from a shaggy dough. Turn the dough onto the counter and lightly form a circular loaf. It can be a bit shaggy.
Transfer to the baking sheet and flatten the dough into a 1 1/2 inch thick loaf. Bake for 25-30 minutes. The top and the edges should be lightly browned.

Don't overwork the bannock dough or it will turn out tough.Wait for the oven to fully preheat before baking the bannock.
