Ingredients
¼
cup
raw cashews
¼
cup
water

tablespoons
Dijon mustard
1 ½
tablespoons
maple syrup
(1 tablespoon + 2 teaspoons)
salt and pepper to taste
Instructions
Add the cashews to a pot and fill to cover with water. Bring to a boil over high heat, then lower the heat to medium and simmer for 15 minutes.
Drain the cashews and add them to a blender with the water. Blend until smooth, about 1-2 minutes.
Transfer the cashew cream to a bowl and fold in the maple syrup and Dijon mustard.
